So I've been doing an A-Z challenge where I beat a random game from each letter of the alphabet, and I just rolled Europa Universalis III for E. I did some research and it looks like there aren't any victory-conditions in game, so for those who have played this game, what's a good victory condition to go for?

While I played not too much EU III, I played a lot (1600 hours, oh boy) of EU IV, and those games are relatively similar. Usually, you often would set your own goals for a campaign; for me, that usually had been one of the many Steam achievements that EU IV has.
But for a more generic win condition, there are two. First would be a World Conquest, which means there are no more nations on the map that are independent of you. That, I assume, is in EU III as difficult as in EU IV and might not be a feasible goal for an A-Z challenge.
More reasonable would be playing to the end date, which is 1821. As a bonus objective, you might want to be the most powerful nation on the map at that point. I personally, especially if you don't play games like that regularly, would consider that as beating the game fair and square.

Alright I might do this then, how long would you say that usually takes?

That's hard to say; it depends on the game speed, how often you pause, and if you have to restart or get to 1821 on your first attempt. I haven't played EU III or IV in a while and have a hard time recalling how long I required for a campaign. Given that you are likely not playing on Ironman or attempting anything ambitious, it should take less than 50 hours. Possibly much less. I would love to give something more concrete, but I played EU III the last time ten years ago and EU IV 6 years ago.

I've played two full games of EUIV with a lot of pausing and restarting because it was more fun for me to play countries that historically didn't fare terribly well. Ethiopia took me about 60 hours to complete and the second game as an ahistorically powerful Ireland I continued from Crusader Kings II took maybe 45 or so. I also put another 10-15 into a learning game that I didn't finish.
If you're just trying to beat it quickly, I'm sure you can cut that down by half or more if you play as France, etc, and don't try to do anything too wildly ambitious. For me the fun is in making crazy alternate histories, though.
